Leftovers! It’s what the day after Thanksgiving is all about, right? This year we didn’t have many, thank goodness, as I am going into major weekend detox mode tomorrow. I’m thinking lots of hot yoga & green juice, so that means I have today to stuff myself silly one last time. So, while everyone else was gorging on turkey & cranberry sandwiches, Mom & I made this…

The Ultimate Vegan Thanksgiving Leftover Tartine. We took a thick slice of toasted hearty whole wheat bread, topped it with country vegan meatloaf, & added on vanilla bean mashed sweet potatoes, golden gravy, & Tex-Mex cranberry sauce.

Add any other leftover sides you have on your plate. In this case, it was some green beans & vegan ceasar salad.
Color me comatose. I think it is time for a nap! Happy post-Thanksgiving, everyone. xo
